Health Council publications within this domain focus on: health risks due to an excess or deficiency of macronutrients (carbohydrates, proteins and fats) and micronutrients (vitamins, minerals, trace elements); the link between nutrition and diseases (obesity, diabetes, eating disorders); the link between food production methods and health risks and benefits to consumers.

A continual activity within this focus area involves regularly reviewing the need for updates to current nutritional standards for energy and nutrients, or the necessity of establishing entirely new standards for specific nutrients.
